Caos de vuelta al "cole"! En mi caso, vuelta a la facultad! Estas primeras semanas son una locura de presentaciones, comprar material, comprar material, comprar material, sufrir por las puñaladas al comprar material, y demás cosas relacionadas con cargar con pellas de 10kg de barro, así como bastidores y tablas de madera o papeles gigantes que hay que transportar como si fuesen de cristal ultrafino!<br />

Pero bueno, parece que ya está empezando a ir todo sobre ruedas poco a poco, que empiezo a estar menos cansada al levantarme temprano (oye, es duro pasar de levantarse a las 10-11h a levantarse a las 6 menos cuarto!) y a aguantar las siete horas de pie dibujando/pintando/esculpiendo del tirón.<br />

Vamos al lío. Cómo veis vuelvo con Los Básicos, porque no podía retrasar más este: El extracto de Vainilla! Lo habréis leido como Esencia de Vainilla, Extracto, Vainilla líquida, y demás variedades. Pero es siempre lo mismo!<br />

El problema que tiene, es que cuando te lo compras en el súper te das cuenta de lo carísimo que es en comparación con el tamaño que suelen tener los botes. Yo recuerdo haber llegado a comprar un bote del tamaño de un dedo pulgar: en tres recetas ya estaba listo de papeles! Así que, cuando me enteré gracias a <a href="http://www.likeastrawberrymilk.com/">Fanny</a> de que era posible hacer extracto de vainilla casero con nuestras queridas <a href="http://conharinasyaloloco.blogspot.com.es/2012/06/los-basicos-vainas-de-vainilla-y.html">Vainas de Vainilla</a> y simple y cutre Vodka <i>chungo </i>(literalmente, el más chungo que encuentres o que, por alguna casualidad, haya acabado entre tus armarios. El del Mercadona vale!), me llevé un alegrón de los buenos.<br />

Al principio era un poco escéptica en cuanto al extracto: tendría el mismo poder de sabor? No sabría a vodka? Pero en cuanto empecé a usarlo noté la diferencia de inmediato: mis dulces sabían a vainilla de la buena! Pero, sin duda, lo que más me enamora de este extracto es que "no se acaba nunca". Cuando uso una cucharadita, le echo un chorrillo de vodka, agito bien, y para la próxima vez está <b>perfecto</b>. Es cosa de magia!<br />

Otra receta, si es que esto puede llegar a llamarse receta, que os quería enseñar, es la de azúcar vainillado, que también es tremendamente caro cuando lo compras en el súper! Yo llevo ya unas semanas echándoselo a las tazas de café o leche calentita y le da un punto genial!<br />

Por cierto, el extracto y el azúcar vainillado son regalitos perfectos para los amigos en reyes: metedlo en una jarrita de cristal mona (en los chinos hay mil), ponedle un lazo y colgadle una etiquetita con un mensaje. Si empezáis ahora el extracto estará listo para entonces! Manos a la obra!<br />

<li>Poner el azúcar en el cuenco y echar dentro las semillas. Dejar a un lado las vainas vacías. </li>

I don't know if out there it's cheaper than here, but here, it's sold in very little bottles that get empty in three or four recipes. Lo de ser estudiante de Bellas artes pasa más desapercibido, aunque también puede formar parte de mi "definición", pero es que el amor por los perros es incamuflable. Puede parecer una tontería, pero es que no me imagino la vida sin mis perrunos. Puede ser cansino sacarles cuando estás debajo de un edredón gigante y fuera hace un frío que pela, siendo la mañana después de haber salido con tus amigos. Desde luego, hasta que no tuve un perro, no comprendí nada de esto. Me gustaban los perros, pero <i>ya está</i>. Es una experiencia que no se parece a nada. Pero bueno, yendo al grano, el bizcocho del que os hablo es uno que empecé a hacer hace muchísimo, de la mano de <b>Bea </b>del <a href="http://www.elrincondebea.com/">Rincón de Bea</a>, del cual cada una de las recetas que he hecho me han salido <b>perfectas</b>. Y bueno, hay que reconocer que desde que hice este bizcocho la primera vez, no he podido parar de hacerlo y recomendarlo (incluso mi frutera me ha pedido la receta!). Así que, qué menos, que recomendarlo aquí.

Es un bizcocho muy muy versátil, que he hecho tanto como <i>layer cake</i> (las tartas estas ultra altas de capas de bizcocho con capas de relleno) con el <i>frosting </i> de chocolate negro que recomienda Bea, como en forma de Bundt cake (los bizcochos con un agujerito en el centro, precisamente es el de la foto de aquí arriba) y de loaf (el que traigo aquí, hecho en un molde alargado como de Plum Cake).

Si os gusta el chocolate negro, de verdad de verdad que merece la pena hacer el relleno ultra fácil del que os hablo (solo hay que mezclar los ingredientes con unas varillas normales! Os explico cómo abajo!). Aunque de todos modos, muchas veces me entran ganas de tomarlo así, tal cual, solo. Y está mortal de blandito y suave.<br />

<ol>
<li>Engrasar el molde con aceite y ponerle un trozo de papel de hornear en la base, si es plana.</li>
<li>Tamizar con el colador la harina, la levadura en polvo y el bicarbonato en uno de los dos boles grandes. Echar la sal y mezclar todo con unas varillas.</li>
<li>Hacer puré el plátano con un tenedor en el cuenco, así ya lo tendremos preparado.</li>
<li>Precalentar el horno a 175ºC</li>
<li>Batir la mantequilla con el azúcar en el otro bol grande a velocidad media-alta unos 3 minutos, 4 si es invierno! Va a ponerse clarita y esponjosa. </li>
<li>Añadir los huevos uno a uno (si no sabemos cascarlos con una mano, como me pasa a mí, cascarlos antes en vasos independientes, para no tener que dejar de batir. Es ultra cómodo!), no añadas el siguiente hasta que el anterior esté completamente integrado!</li>
<li>Poner la velocidad al mínimo y añadir la vainilla y el puré de plátano. </li>
<li>Aumentar la velocidad a medio-bajo y añadir 1/3 de la mezcla de harina. Batir solo hasta que esté ligeramente homogéneo, porque vamos a intentar no sobrebatirlo. Añadir la mitad de la nata fresca y volver a mezclar ligeramente. Luego añadiremos otro tercio de la harina, y repetimos con la mitad restante de nata. Finalmente añadimos lo que falta de harina y terminamos de mezclar con el tenedor.</li>
<li>Cortar las nueces con un cuchillo y añadirlas, mezclando con el mismo tenedor.</li>
<li>Echa la masa en el molde. En caso de hacer una tarta con varias capas (<i>Layer cake</i>), pesa la masa resultante y divide entre las capas. Luego echa en el molde la cantidad que haya salido y repite según vayas horneando capas!</li>
<li>Hornear, si utilizas el molde de Bundt o el de Plum Cake, unos 50 minutos; y si utilizas los de 20cm redondos, 25-30 min cada uno. Yo lo que hago es, a los 45min, acercarme e ir comprobando clavándole una brocheta (si sale limpia o con alguna miguita es que está hecho) cada 3 minutos aprox.!</li>
<li>Dejar enfriar en el molde 10 minutos. Pasados los 10 minutos, desmoldar sobre la rejilla y dejar enfriar del todo!</li>

· A mí no me gusta el sabor fuerte y profundo de fruta horneada, por lo que me lo como el mismo día y me chifla. Sabe perfectamente a fruta pero no de forma empalagosa! En cambio, a mi madre le encanta el sabor a plátano fuerte y, a partir del día siguiente (siempre envolviéndolo en papel film transparente para que esté hermético!) le sabe a gloria porque se intensifican los sabores. Es cuestión de gustos! :)</div>

· Si sois chocolateros, ya os digo que tenéis que probar a ponerle encima el <b>Frosting de chocolate</b> negro que Bea recomienda. Yo, para ponérselo por encima al Bundt de la foto de arriba, usé solo <u>120g de Nata fresca</u> y <u>350g de chocolate negro 70%</u>. Solo hay que derretir el chocolate al baño maría o al microondas (siempre dándole vueltas cada 10 segundos!), esperar a que se ponga a temperatura ambiente y mezclar con unas varillas la nata fresca! (también a temperatura ambiente, si no puede solidificar el chocolate con el frío!)) Cuatriplica las cantidades para usarlo en un Layer cake!</div>

<li>Grease, line with parchment (in case you use a flat bottomed pan) and flour the pan.</li>
<li>Sift the flour, baking powder, baking soda and salt into one of the big bowls. Whisk it until smooth.</li>
<li>Mash the bananas with the fork into the small bowl.</li>
<li>Preheat the oven at 175ºC</li>
<li>Beat the butter with the sugar at medium-high speed for 3 minutes, 4 if it's cold! It's going to get pale and fluffy.</li>
<li>Add the eggs one at a time. Don't add the next one until it's well integrated!</li>
<li>Slow the speed and add the vanilla and banana purée. </li>
<li>Add 1/3 of the flour mixture and increase the speed to medium. Beat until just incorporated and add half of the sour cream. Beat again until just incorporated: we're trying not to over beat out cake! Mix in another 1/3 of the flour, and repeat the steps with the last half of the sour cream and the last 1/3 of flour, finishing by hand.</li>
<li>Cut the walnuts into pieces with the knife and mix them into the batter.</li>
<li>Put the batter into the pan (weigh it and divide evenly if you're making a layer cake!)</li>
<li>Bake, if using the bundt or the loaf pans, for 50 minutes; and if using the 20cm pans, 25-30 mins each one. What I do is checking the cake 5 minutes before with a skewer or cake tester (if it's clean or has one or two crumbs, it's done!). If it isn't done, I check it every three minutes!</li>
<li>Leave it cool into the pan for 10 minutes. Then put it into the rack and leave it cool.</li>

Otro detalle que me encantó fue que Julia respondiese a absolutamente todas nuestras dudas, por tontas (culpable!) que fuesen, además de darnos toda la libertad del mundo para modificar los diseños o crear los nuestros propios: Nos daba varios modelos distintos de cada galleta para seguirlos (si estábamos más perdidos) o para crear otro tomándolo como base o para, directamente, no tomarlo e inventarnos algo! Vamos, una maravilla para la creatividad! :D<br />

Con el curso he tenido la oportunidad también de <i>probar </i>por fin las famosas galletas decoradas, tanto con glasa como con fondant o fondant impreso, y la verdad es que tengo una relación amor-odio con ellas de la que ya os hablaré en profundidad en otra entrada, o esta va a ser interminable!<br />

Bueno, vamos al lío! Quería enseñaros un <i>frosting </i>(cobertura o relleno para tartas o cupcakes) que no he parado de hacer desde que lo probé. Es mi receta oficial cuando se trata de vainilla.<br />

Y es que ahora que sabéis todo lo que yo sé sobre las <a href="http://conharinasyaloloco.blogspot.com.es/2012/06/los-basicos-vainas-de-vainilla-y.html">Vainas de Vainilla</a>, seguramente os estéis planteando compraros alguna... Yo aviso: una vez te compras vainas buenas, no te imaginas la vida sin ellas! Sinceramente: en qué piensan cuando hacen los bizcochos de vainilla industriales? Creedme que es algo que me planteo a menudo.<br />
<br />
Vale, vuelvo al tema, que me enrollo como una persiana: El caso es que la primera vez que probé un <i>frosting</i>, era un <i>buttercream </i>( la clásica crema de mantequilla que cubre los cupcakes), y me morí de dulzor, es decir, que colapsé. Vamos, que era demasiado dulce para mi gusto.<br />
<br />
Desde luego, este <i>frosting </i>de Vainilla sigue siendo bastante dulce, ya que los <i>frostings </i>es lo que tienen, pero no tiene <b>nada que ver</b> con el excesivo dulzor y empalagamiento de otros que he probado. Sabe a vainilla de la buena y, extendiéndolo siempre sin pasarse de cantidad, le da un toque brutal a un buen bizcocho. Lo que más me gusta es unirlo con mi receta preferida del mundo de <a href="http://conharinasyaloloco.blogspot.com.es/2012/02/el-bizcocho-de-chocolate-mullidito.html">Bizcocho de Chocolate</a> y con la de Bizcocho de Vainilla, que caerá tarde o temprano por aquí (es inevitable! Casi me sé la receta de memoria!) porque esa fina capa los hace como tres veces más jugosos!<br />

<li>Pon la mantequilla en el bol y bate a velocidad media durante 8 minutos. Se va a aclarar y a ponerse más cremosa.</li>
<li>Añade el resto de ingredientes,<u> tamizando el azúcar glass al echarlo</u>, y bate primero en velocidad baja durante 1 minuto, y después a velocidad media durante 6 minutos. El frosting se va a volver muy clarito, cremoso y esponjoso.</li>

· Si queremos<b> añadirle un color</b>, es el momento! Os recomiendo siempre utilizar <b>colorantes en gel</b>, de tiendas especializadas (Mi marca preferida es Americolor), ya que con una sola gota ya tiñe y no es necesario añadir mucho líquido para conseguir teñir el frosting. Se puede comprar en muchas tiendas online de repostería (Como <a href="http://www.megasilvita.com/tienda/colorantes/americolor.html">Megasilvita</a> o <a href="http://www.artynnova.com/v1/index.php?lang=&area=1&sel=2&subsel=3&subsubsel=3&trosql=&start=12">Artynnova</a>) y en algunas tiendas físicas especializadas en respostería creativa, en<a href="http://tartasfondant.blogspot.com.es/2011/01/donde-comprar-material-para-hacer.html"> este listado</a> puedes buscar tu ciudad a ver si tienes suerte! </div>

En caso de no querer que aparezcan los puntitos de la vaina en el frosting de color, puedes sustituir la Vaina y usar 1 cucharadita y media de extracto!</div>

· Es mucho más fácil de usar si <u>nada más hacerlo lo aplicamos</u> sobre la tarta o cupcake, aunque se puede guardar en un tupperware con un papel film pegado a su superficie en el frigorífico un par de días, batiéndolo bien con las varillas antes de usarlo.</div>

· Hay que tener algo de cuidado con el calor y este frosting, ya que, al tener mantequilla, puede empezar a derretirse. · You should take care when it's hot, it can begin to lightly melt! I made this cake for my cousin here in <u>Seville in July</u> (which you may know it's usually around 40ºC/ 104ºF. This is hell!) and it spend all day outside. Look! It's beginning to melt around the decorations!<br />

Hace unas semanas, como muchos sí sabréis, se aprobó un Real Decreto Ley que afirma una subida de tasas en la Universidad (alrededor de 500€ más tendremos que pagar los que no hemos suspendido ninguna vez el año que viene), así como el aumento de horas por profesor (y por ende el despido de otros tantos que "sobran"... Para que os hagáis una idea, solo en el departamento de dibujo de mi facultad, 22 profesores irán a la calle!)<br />

Además, los estudiantes extra-comunitarios (como un compañero de clase que es mexicano, que no ha bajado del 9 en sus notas por ahora) tendrán que pagar el 100% de la matrícula, lo cual oscila entre los 6.000€ o 10.000€ según la carrera, en un solo año. Obviamente tendrá que volver a su país, después del esfuerzo que ha hecho su familia porque pudiese estudiar aquí.<br />

Muchos dirán: "Es que hay que recortar, hay que apretarse el cinturón", como borregos televisivos.<br />
<br />
¿En serio? ¿En serio es necesario recortar en sanidad y educación?<br />
<br />
En España tenemos alrededor de 400.000 políticos, mientras que en Alemania, con el doble de población, tienen alrededor de 100.000 políticos.<br />
En España, le damos a los que han trabajado una simple legislatura su propio sueldo para toda la vida, a lo Nescafé.<br />
En España, en lugar de encarcelar a los banqueros como en Islandia (<a href="http://www.20minutos.es/noticia/1340554/0/islandia-devuelve/fmi-prestamo/antes-plazo/">y les va de lujo</a>) utilizamos el triple del presupuesto del Ministerio completo de Educación para rescatar sus bancos.<br />

Y en España, <a href="http://youtu.be/gI9XLLSic3M">censuramos</a> a los jóvenes que se manifiestan. Y simplemente por eso no os habéis enterado de lo que ocurre en Sevilla.<br />

Bueno, para los que tengáis interés, voy a resumirlo: El 100% de las facultades de las Universidades de Sevilla, están en desacuerdo con el Real Decreto Ley 14/2012 y alrededor del 90% de estudiantes votaron un SÍ al Paro Académico. Y así llevamos dos semanas, sin dar clases y sin parar de movernos en las calles (tenemos un calendario con actividades a todas horas y encierros nocturnos).<br />

En Twitter han censurado nuestros Trending Topics, como #SevillaPara o #EncierroUS, así como nuestras cuentas oficiales, que ya van por la tercera, y sin ni siquiera dar una explicación. En los periódicos, se oculta las enormes cifras de estudiantes en movimiento, como los 70.000 <u>según la policía</u> que nos manifestamos el 22 de Mayo. Eso sin hablar del ABC, que utiliza fotografías de nuestros movimientos para <b>mentir descaradamente</b> diciendo que nos movemos en contra del Paro Académico (O incluso roba fotografías de nuestros fotógrafos y borra las marcas de agua. Os suena?)<br />

Pero bueno, volvamos a nuestro mundo blogueril bello y fantabuloso! Como imaginaréis, una de las razones para que haya tardado tanto es el meneo que tenemos en la Universidad de Sevilla, otro las entregas y exámenes, que los tenemos aquí ya, y otro que he estado pachuchilla.<br />
<br />
En esto que me ha dado por pensar en que podría hacer una nueva sección para esas palabras e ingredientes que, cuando empecé a interesarme por la repostería, no tenía ni idea de que existían ni como conseguirlos ni como utilizarlos. Como "tamizar", "vainas de vainilla", "levadura fresca",.. y ya si nos metemos en el inglés... "buttermilk", "sour cream" o "frosting" o las traducciones extrañas de los libros de cocina que dicen "crema" y se refieren a "nata", o dicen "harina de todo uso" y se refieren a "harina de trigo"... La verdad es que ahora mismo no recuerdo todas las dudas que tenía, pero eran muchas, y tranquilos, poco a poco me voy acordando!<br />

Y bueno, la primera no será una duda en sí, sino un gran <b>descubrimiento</b>! Quién me iba a decir a mí que esas Vainas de Vainilla resecas y acartonadas de los súper eran una estafa! Bueno, estafa... adornémoslo con... una decepción calidad-precio.<br />
<br />
La "revelación" llegó un día que, leyendo <a href="http://www.elrincondebea.com/">El Rincón de Bea</a>, se chocaron contra mi cabeza unas palabras: <i>"Si hay algo imprescindible en cualquier cocina en la que se haga repostería es la vainilla"</i>. Y fue gracias a aquella entrada que descubrí <a href="http://www.vanillapodsuk.com/">Vanilla Pods</a>, una página web donde venden Vainas de Vainilla que son lo mejorcito del mundo de las vainas de vainilla!<br />
<br />
No os voy a contar las diferencias entre las vainas de Calidad A, B o C (A la mejor, C la peor), ya que Bea lo cuenta perfectamente en <a href="http://www.elrincondebea.com/2010/02/imprescindibles-viii-vainilla.html">su entrada</a>, pero si os voy a explicar qué vainas compro yo de <i>Vanilla Pods</i> y cómo usarlas y guardarlas.<br />
<br />
Bien, en Vanilla Pods, una vez entráis, os aparecerán los distintos tipos de Vainas que tienen, y sus orígenes.<br />
Hay <b>dos tipos</b> o especies: Las vainas Bourbon y las de Tahiti. Las Tahitianas tienen un sabor más intenso y son más regordetas, mientras que las de Bourbon tienen un sabor más plano, el simple sabor de vainilla que recordamos "de toda la vida".<br />
En cuanto a los orígenes: las Bourbon pueden venir de Uganda, Madagascar (que normalmente son grandes industrias) o de Papua Nueva Guinea (que son pequeñas granjas familiares); y las de Tahiti pueden ser las "Tahitianas verdaderas", es decir, las que provienen de Tahiti, que son ultra-caras e inalcanzables para mí, o las de Papua Nueva Guinea, que son perfectamente asequibles y, sin duda, mis preferidas (también vienen de pequeñas granjas familiares)<br />
<br />
Yo he probado las Bourbon de Madagascar (de la especie Bourbon, cultivadas en Madagascar) y las de Tahití "falsas", es decir, las de Nueva Guinea, por lo que son muchísimo más baratas (Para que os hagáis una idea, las de Nueva Guinea valen alrededor de 20€ las 20 vainas súperlargas (con gastos de envío) y las de Tahití, cerca de los 80€...). Llevo ya casi tres años comprando las Tahitianas de Nueva Guinea y, sinceramente, no me imagino la vida sin ellas!<br />

Si tenemos en cuenta que una vaina chunga de súper nos cuesta alrededor de 1€ y pico (y eso si la encuentras barata, las he llegado a ver por 3 y 4 euros), a mí personalmente me merece la pena comprarme las 20 vainas mortales-de-ricas por 20 euros. Yo me las pido para Reyes, por si os sirve! Voy a explicaros resumidamente cómo comprarlas y conservarlas, cómo comprobar que están buenas, y cómo utilizarlas en cualquier receta. Pero, de verdad, si queréis saber más aún, leed el artículo de Bea que enlacé arriba! Es una Biblia vainillil!<br />

Si sabes inglés y has comprado anteriormente online, no tienes por qué leerte esto! Simplemente léetelo si tienes alguna duda. Vamos allá!:<br />

<li>Para comprarlas, primero iremos a la página de <a href="http://www.vanillapodsuk.com/">Vanilla Pods</a>. </li>
<li>Una vez dentro, buscaremos el enlace en el que pone: <u>Papua New Guinea Tahitian Vanilla Beans</u> (o cualquiera de las otras que he mencionado si las preferís, pero ya os digo: Estas que os cuento están mortales!). </li>
<li>Os llevará a una página donde podréis elegir el largo, a no ser que no les queden de alguno de los largos (Pondrá: <i>Out of stock!</i>). Yo suelo elegir el más largo posible, es decir, <i>"Super Long"</i>, total, ya que las compro, aprovecho los gastos de envío, que soy estudiante!... </li>
<li>Ahora os llevará a una página donde elegir la <u>cantidad</u>. Todo esto depende de cuánto horneéis, yo, horneando al menos una vez al mes (y a menudo más) y cogiendo 7 vainas para empezar a hacer el Extracto de Vainilla casero (ya os hablaré de él!), he gastado 20 vainas en un año. Posiblemente necesitéis menos, o más, todo depende de vuestro mono! Una vez elijáis la cantidad, le dais a <i>"Buy"</i> (comprar) a la derecha del todo.</li>
<li>Os llevará a la página de "cesta de la compra", donde pondrá en una lista lo que habéis elegido (imagino que solo el paquete de vainas!). Tenéis que darle al desplegable de <i>"Delivery Method"</i> (Modo de envío) y elegir "Europe" si vivís aquí en Europa, o "Worldwide" si sois de cualquier otro lugar!</li>
<li>El precio total a pagar, en Libras, se actualizará con el envío elegido, y llegará el momento de completar la compra metiendo tus datos. Os aseguro que es una página absolutamente segura y seria, pudiendo pagar tanto con tarjeta como con Paypal. Vamos al lío: le damos a "<i>Checkout with Paypal"</i> tanto si tenemos Paypal como si no: es la forma de pago más segura! </li>
<li>Os llevará directamente a la página de Paypal, donde si tenemos cuenta le daremos a <i>"Have a Paypal Account?"</i> (Tienes una cuenta Paypal?) y meteremos nuestros datos para pagar con nuestra cuenta. Si no tenemos, le damos a <i>"Don't have a Paypal Account?"</i> (No tienes una cuenta Paypal?) para pagar con nuestra tarjeta de crédito o débito a través de Paypal, a modo de invitado. </li>
<li>Se os desplegará un menú donde tendréis que buscar en el apartado <i>"Country"</i> (País), <b>"Spain" </b>(O vuestro país!) y automáticamente la página se cambiará al español o al idioma de tu país si eres de otro lugar! Rellena los datos tranquilo, es <b>la página web más segura del mundo</b> para hacer compras Online. Dadle a "continue" o "continuar" en las páginas que os queden y listo! Os llegará un e-mail con la factura. </li>
<li>Días después, os llegará un segundo e-mail que querrá decir que os lo han enviado ya y <u>solo queda esperar a que llegue</u> (:D!), donde pondrá esto:</li>

Para saber si una vaina está buena, simplemente observamos si la superficie está aceitosa y brillante (como las de la fotografía) y si se puede hacer un nudo con ella de forma fácil, ya que estará elástica y no se romperá ni quebrará.<br />
<br />
Para conservarlas, en mi caso, al comprarlas de 20 en 20, las divido en <u>grupitos de 5 vainas</u> y envuelvo cada grupito en papel film. Luego, vuelvo a envolver cada grupo en papel film, teniendo así dos capas. Finalmente, las meto todas en un bote de cristal hermético (Imagino que cualquier recipiente hermético sirve!) que meto en un armario, ya que debe estar en un lugar fresco, seco y oscuro (nunca el frigo ni el congelador!!).<br />

Además, es recomendable airearlas cada 2 meses, es decir, abrir todos los paquetitos, dejarlas al aire alrededor de un cuarto de hora y volver a guardarlas con el mismo proceso. Se supone que duran 2 años, aunque yo las que he utilizado al final del primer año ya empezaban a estar secas!<br />

*Si por un despiste o casual se te han secado, puedes hidratarlas enjuagándolas con agua templada-cálida y dejándolas reposar tal cual hasta que las veas "sanas"!<br />

Pues bien, para utilizar una vaina, puede haber varias opciones. Lo más normal es que te pidan la vaina abierta entera (para hervirla en leche por ejemplo, como es el caso de las recetas de crema pastelera) o el interior de una vaina de vainilla. Vamos a ver paso a paso cómo se haría:<br />

<li><span style="background-color: white;">Cortamos los extremos (que son más gorditos) de la vaina con un cuchillo.</span></li>
<li><span style="background-color: white;">Rajamos la vaina de un extremo al otro, abriéndola como un libro. </span></li>
<li><span style="background-color: white;">Raspamos el interior con la hoja de un cuchillo (lo mejor es abrirla bien con los dedos y rasparla con la mitad de la hoja del cuchillo), así sacaremos las semillas o, como lo llama Bea, el "caviar" de la vaina. </span></li>
<li>Las semillas las utilizaremos para la receta en cuestión, y nada de tirar la vaina!! Podemos utilizarla tanto para hacer nuestro propio Extracto de Vainilla (pronto la receta!) como para aromatizar azúcar (y hacer azúcar vainillado). </li>

En caso de haber utilizado la vaina entera, podemos limpiarla y secarla bien y también la utilizaremos para el Extracto de Vainilla o el azúcar vainillado. Salen baratísimos así! :D Aquí os dejo una ilustracioncilla que he hecho (en inglés) con el paso a paso.<br />

The "revelation" came a day I was reading <a href="http://www.elrincondebea.com/">El Rincón de Bea</a> (a Spanish blog), and some words hit my brain: "If there's something essential in any baker kitchen is real vanilla!". And that's how I discovered <a href="http://www.vanillapodsuk.com/">Vanilla Pods</a>, a web page that sell Vanilla beans that are among the best in the world! And what is better: Its worldwide shipping costs are (atm) £3.86/$6.11! </div>

I'll just copy what Vanilla Pods explain about the Grades of quality of their beans, but you should just know Grade A is the best and C the worst, it's just this simple!<br />

Tahiti have a powerful flavour and are chubbier, while Bourbon have the simple vanilla flavour from your childhood.<br />
And there are <b>several origins</b>: The Bourbon variety may come from Uganda, Madagascar (usually large industries) or Papua New Guinea (small familly farms); and the Tahiti variety can be from Tahiti (These are super expensive and the real-awesome-true Tahitian beans. The ones I've been buying for three years right now are the Papua New Guinea Tahitian Vanilla Beans. I've tried the Madagascar Bourbon Vanilla beans, but I've doubtless stuck to the Tahitian variety. They're cheap enough for a student to buy 20 a year and the flavour... Well, I really have no words. </div>

To identify a good bean, we'll simply look at its surface: If it's oily and shiny (Just like the ones in the photographs) and you<b> can easily tie a knot</b> with it, it'll be great! It's perfectly flexible and won't break or crack. </div>

To store them, I divide them in groups of 5 beans, and double cling-film each group. Then, I store them into a glass air-tight container at room temperature (no fridge or freezer!)</div>

Once stored, you should air them once per two months, I mean, you should open all the packets, leave the beans in the open air for 15 minutes or so, and then store them again as you had already done. They should last for 2 years, but I've found that when they've been one year stored, they begin to dry, so I'd recommend to buy enough for one year of baking and then re-buy!</div>

To use a vanilla bean, there are two options: The usual one is they asking for a <u>whole open bean</u> (to boil it with milk, or leave it into a sugar jar... it's just to flavour!); on the other hand, they can ask you for the beans or the "inside" of a vanilla bean: Let's see a step by step on how to take those seeds out (You can see the illustration above too!) </div>

Me diréis: qué leches son los <i>Chouquettes</i>? –pronunciado "shuquets"– Son blanditos, rellenos, huecos? Pues son unas bolitas francesas del tamaño de pelotas de ping-pong, que son huecas y jugosas con un azúcar que le llaman "perlado" por encima. Tranquilos, también os explicaré cómo hacer un azúcar perlado casero. O algo parecido, que es lo que yo he usado.<br />

Conocí los chouquettes en <a href="https://www.facebook.com/pages/COLETTE-p%C3%A2tisserie-boulangerie/126222157398076">Colette,</a> una repostería francesa con un olor nada más entrar que es para babear, que tiene dos locales en Sevilla, en Virgen de Luján y en la propia Plaza Nueva, bajo el hotel. Si vivís en Sevilla tenéis que ir <b>obligatoriamente,</b> y probar sus chouquettes, su Pain au chocolat (lo que conocemos como napolitanas de chocolate) o croissants y sus tartaletas de limón y merengue. Yo, como soy muy bruta, lo hago todo junto, pero es recomendable hacerlo en varias visitas! Pero, sobre todo, sus chouquettes. De verdad, nosotros compramos unos 40 cada vez que vamos... son como pipas, no hay quien pare!!<br />

Y esta receta la descubrí en el blog de Fanny, <a href="http://www.likeastrawberrymilk.com/">Comme un lait fraise</a> que, si no conocéis, tenéis que visitar aunque sea para ver sus fotos analógicas... tienen un encanto y una delicadeza increíbles. La receta digo que es fácil porque lo es: Mezclar ingredientes en cazo calentándose, separar del fuego, añadir harina de un golpe, mezclar y volver a poner en el fuego unos minutos. Luego se añaden los huevos y voilà! A ponerlo en una bandejita con el azúcar y al horno. Más rápido imposible, con lo ricos que están! <br />

<li><span style="font-size: small;">Mezclar todo con las manos hasta formar una bola durita. Rallarla con un rallador de agujeros grandes, como el de rallar zanahoria, y romper con los dedos los trozos que hayan quedado demasiado largos, formando bolitas de unos 5mm (no te preocupes si quedan muchos demasiado pequeños, o algunos grandes, tampoco es necesario que quede perfecto!)</span></li>
<li><span style="font-size: small;">Dejar secar en una bandeja. Depende del tiempo que haga y la humedad, pero con unos 15 minutos (5 en verano, tomad nota!) debería estar perfecto. Si no, podéis probar a meterlo en el micro unos segundos, seguro que queda perfecto (la próxima vez que los haga lo probaré y os cuento!)</span></li>

<span style="color: #cccccc;">-</span> <u>Para los Chouquettes</u> <span style="color: #cccccc;">-</span><br />
<ol>
<li><span style="font-size: small;">Precalentar el horno a 200ºC y preparar las bandejas (o con el papel de hornear o con la mantequilla). Tamizar (pasar por un colador de rejilla fina, dándole golpecitos en un lado con la mano) la harina.</span></li>
<li><span style="font-size: small;">Pon la leche, la mantequilla y la sal en el cazo. Ponlo a fuego lento (yo lo pongo a 5 de 12) para que se derrita la mantequilla antes de que la leche hierva. </span></li>
<li><span style="font-size: small;">En cuanto empiece a hervir, retirar del fuego y añadir toda la harina tamizada de un golpe. Mezclar con la cuchara de madera hasta que esté todo homogéneo y volver a poner en el fuego.</span></li>
<li><span style="font-size: small;">Sigue mezclando en el fuego hasta que veas que una fina capa aparece en el fondo del cazo, lo cual significa que la masa está suficientemente seca (no debería estar pegajosa).</span></li>
<li><span style="font-size: small;">Pásalo al bol (uno normal o el de tu batidora de pie, si tienes) y déjalo enfriar 2 o 3 minutos. Mientras tanto, coge uno de los huevos y bátelo en un vaso. Cuando añadamos los huevos agregaremos los 4 restantes y la mitad de este huevo batido, reservando la otra mitad para pincelar los chouquettes. </span></li>
<li><span style="font-size: small;">Aquí hay dos opciones:<br /> - <u>Si tienes batidora de mesa</u> (yo no tengo, tengo de varillas): coloca el bol en la batidora y, con el accesorio de la pala, a velocidad media, ve añadiendo <b>cuatro</b> huevos uno a uno, no añadiendo el siguiente hasta que el anterior esté totalmente integrado. Al final, añade la mitad del huevo que hemos batido. </span><span style="font-size: small;">Reserva la otra mitad.</span><br /><span style="font-size: small;"> - <u>Si no tienes batidora de mesa </u>(yo lo hago así): Coge la cuchara de madera y, si no tienes mucha fuerza, a un buen buen samaritano fuerte que lo haga por tí! En mi caso elegí a Adri, mi novio. Ve añadiendo los cuatro huevos uno a uno, no añadiendo el siguiente hasta que el anterior esté totalmente integrado. Al final, añade la mitad del huevo que hemos batido. Reserva la otra mitad.</span></li>
<li><span style="font-size: small;">Pasa la masa a la manga pastelera o la bolsa de congelación sin esquinita y forma, en las bandejas, bolitas de unos 3cm de ancho y 2 de alto, sin pegarlas demasiado. Así:<br /><br />

<li><span style="font-size: small;">Pincela las bolitas con el huevo batido. Coge un tenedor y, mojándolo en la mezcla y dejando que se escurra un poco (esto es para que no se pegue!) marca las bolitas una a una, primero de aplastándolas un poco horizontalmente y luego verticalmente, de manera que las marcas formen un ángulo de 90º! <li> Echar el azúcar perlado por encima, sed generosos!</li>
<li>Meter en el horno durante 25 minutos aproximadamente, hasta que estén doraditos (como en las fotos!) No deberían estar absolutamente secos por dentro. Yo os aconsejo asomaros a los 20 minutos e id dejándolos 3 minutos si no están doraditos, dejarlos otros 3 minutos y volver a comprobar, etcétera! Cuando los veáis dorados, sacad uno y partirlo por la mitad para que se enfríe, soplad y probadlo! No debería estar extremadamente mojado por dentro, sino un poco húmedo y jugoso. </li>
<li>Sacarlos y dejarlos enfriar en una rejilla (o como ya os he explicado en otras entradas, podemos utilizar también la de tapar las sartenes de ikea –<a href="http://www.ikea.com/es/es/catalog/products/10112530/">ésta</a>– colocándola boca abajo encima de cualquier bandeja de paredes altas o en la <a href="http://www.ikea.com/es/es/catalog/products/70186090/">tapa del microondas</a> boca abajo, o la propia rejilla del horno, enfriándola bajo agua fría si estaba dentro!)</li>

Chouquettes are, of course, french, and a start-and-don't-stop treat. This is the perfect example to say <i>the simpler, the better</i>! So few ingredients and still so awesome.<br />

<li><span style="font-size: small;">Mix everything with the hands until you get a slightly hard paste. Grate it with the large holes grater (like the one we use to grate carrot) and break up with the fingers the longest pieces, so that you get small "pearls" of about 5mm (don't worry if there are lots of smallers pearls and some bigger ones, it really doesn't matter)</span></li>
<li><span style="font-size: small;">Leave it dry on a tray. Time depends on the humidity, it may be ok with 15 minutes, or 5 if you are in summer! Or simple microwave it some seconds, it should come out absolutely dry.</span></li>

<li><span style="font-size: small;">Preheat oven to 200ºC and line or butter the baking sheets. Sift the flour.</span></li>
<li><span style="font-size: small;">Put the milk, butter and salt in the saucepan. </span>Put the saucepan on the heat on low, so that the butter melts before it starts simmering.</li>
<li>As soon as it boils, put the saucepan out of the heat and add the flour, all at once. Mix it with the wooden spoon until it smooth and return it to the heat.</li>
<li>Keep mixing on the heat until a fine layer appears at the bottom of the saucepan, what means that the dough is dry enough (it shouldn't be sticky!)</li>
<li>Put the dough in the bowl (or stand-mixer bowl) and let it cool for 2-3 minutes. While it cools, take one of the five eggs and beat it in a glass or cup, with the fork. When we add the eggs, we are going to integrate the other 4 eggs in the dough, and then add half of this beaten egg, and save the other half to brush the chouquettes. </li>
<li>Here we have two options:<br /> - <u>If you have an stand mixer</u> (I don't!): place the bowl in the mixer and, with the paddle attachment, add the four eggs one at a time. Only add the next egg when the previous is totally integrated. Then, add half of the beaten egg and set aside the other half.<br /> - <u>If you don't have an stand mixer</u> (I do it this way): Take the wooden spoon and, if you don't are strong, take a great strong man to do this for you! I choose Adri, my boyfriend. Add the four eggs one at a time. Only add the next egg when the previous is totally
integrated. Then, add half of the beaten egg and set aside the other
half.</li>
<li>Put the dough in a piping bag or the freezing bag and pipe, on the baking sheets, little balls of about 3cm wide and 2cm high. Like this<span style="font-size: small;">:<br /><br />

Take a fork and, dipping it in the eggwash and leaving it drain a bit, score them one by one, first horizontally and then vertically, so that the marks form a 90º angle! <li>Sprinkle them with pearl sugar. Be generous!</li>
<li>Bake them for 25 minutes aprox., until golden. They shouldn't be totally dry on their inside. I check them when 20 minutes have passed, and then check them every 3 minutes, until golden. When golden, I take one out, slice it in half, blow it and eat it, just to test it! It shouldn't be either too humid, just a bit moist.</li>

Cuando solo queden algunos grumitos, con darle vueltas y el calor de lo demás se derretirán solos! Dejar aparte. <li><span style="font-size: small;">Una vez homogéneos, añadimos el resto (la mantequilla, la ralladura y zumo de limón y la sal) y batimos de nuevo.</span></li>
<li><span style="font-size: small;">Ahora empezaremos con el microondas: Al principio tendrá una consistencia muy líquida y parecerá que no ocurre nada, pero de pronto se espesará y bajaremos los tiempos! Se hace así:<br /><br />· Lo metemos en el microondas 1 minuto. Sacamos y batimos </span><span style="font-size: small;">con las varillas</span><span style="font-size: small;">. Luego lo metemos 1 minuto más, sacamos y batimos (tened cuidado de que no esté muy caliente el bol y os queméis!) Tendrá una consistencia liquidilla:<br /><br />

For those who already know it: this is going to blow your minds! It's made in 15 minutes and it's really YUMMY! I only have to tell you that my sister and her friend (who were sleeping at home) ate it by spoonful in one night!<br />

For those who doesn't: The lemon curd –even if it sounds terrible– is a cream that is intensely flavoured with lemon and can be eaten with almost everything: yogurt (try stiring 1 tbsp –or two!– of lemon curd with a greek yogurt... HEAVEN!), pancakes, scones, toasts, ice-cream (that's heaven too!), whipped cream (half lemon curd, half whipped cream) and strawberries... The list is endless! <br />

Para los que seáis lectores habituales de blogs de cocina, estos bollitos no os serán desconocidos. Suelen llamarlos <b>Bocaditos de Nubes</b>, y que no os extrañe! Son como almohaditas de felicidad! <br />

Cuando leí que se compraba en herboristerías dudé y pensé que si lo preguntaba en la de mi barrio me mirarían con cara de loca, pero no! Fui, lo pregunté, y me dijeron que claro, que estaba en no se qué estantería. Increíble, eh?<br />

Sandra os dará fe de lo ultrablanditos que son! Y lo mejor es que se les puede cambiar el sabor muy fácilmente! Nosotras hicimos unos cuantos de limón, que nos tomamos untados con <b>lemon curd</b> (sí, sí, la próxima tiene que ser la receta del lemon curd! Que desde que he aprendido a hacerla en microondas me he vuelto una yonki... hasta a cucharadas!!) y otros de vainilla, que estaban riquísimos con nutella... y para qué nos vamos a engañar, cayeron muchos de los dos tipos tal cual! Es que solos también están mortales!<br />

Para la receta, como os comentaba arriba, vamos a utilizar <u>fécula de patata</u> y otro ingrediente que os puede sonar "raro", <u>levadura fresca</u>. La segunda es la levadura que se utiliza siempre para las masas levadas, es decir, la bollería, viene en cubitos y está en la zona de las mantequillas en los supermercados. Yo siempre la compro en Mercadona porque es el de mi barrio, pero cuando estuve en Santiago de Compostela la encontré fácilmente en un Carrefour!<br />

<ol><li><span style="font-size: large;"> </span> Mezclamos en el bol todos la harina, la fécula de patata, el azúcar y la sal. Añadimos la mantequilla, la ralladura y la leche (con la levadura disuelta en ella, simplemente la echamos dentro y desmenuzamos con los dedos).</li>
<li>Ahora vamos a amasarlo todo: <br />
- Para hacerlo a mano, podéis ver cómo amasa Su de Webos fritos en <a href="http://youtu.be/NBhRo3TiPw8?t=6m11s">este vídeo</a> en el que explica cómo hacer un roscón. Desde el minuto 6:11 al 8:30 aprox. os sirve perfectamente! Amasaremos unos 15 minutos, o hasta que esté blandita y no pegajosa.<br />
- Si tenemos una panificadora (yo tengo la del lidl, que la venden a 40€ aprox.), la ponemos en el modo amasar sin levado (masa para pasta en la mía) y la dejamos amasar 15 minutos.<br />
- Si tenemos amasadora, la ponemos 3 minutos a velocidad lenta y 8 a rápida.</li>
<li>Después de amasar, le damos forma de bola y la dejamos levar (reposar) en el bol, tapada con un trapo o con un papel film aceitado (como hace Su en el vídeo) durante 1 hora y media.</li>
<li>Cuando haya pasado esta hora y media, la amasamos un poco más a mano para desinflar un poco la masa y la vamos a cortar para hacer las bolitas. Podemos cortar 15 o irlas pesando, como hago yo, en bolas de 35g. aproximadamente. Las colocamos encima de una bandeja de horno con papel de hornear para que no se peguen (si no nos caben y tenemos dos, pues colocamos la segunda tanda en la otra bandeja, y si no tenemos dos bandejas de horno, colocamos la segunda tanda en una bandeja normal con papel de hornear, y luego solo las deslizamos tirando del papel hasta la bandeja que habremos usado una vez terminado el horneado).</li>
<li>Dejamos levar otra vez en las bandejas una hora más, para que vuelvan a subir de volumen y ponemos a precalentar el horno a 180º un rato antes de terminar.</li>
<li>En la receta dice que horneemos 12-15 minutos, pero en mi horno siempre terminan siendo 19. Yo siempre pongo la alarma a los 14 minutos y me voy asomando: cuando estén un poco doraditos, los sacamos!</li>
<li>Los colocamos en una rejilla (o como expliqué en la entrada del bizcocho, podemos utilizar también la de tapar las sartenes de ikea –<a href="http://www.ikea.com/es/es/catalog/products/10112530/">ésta</a>– colocándola boca abajo encima de cualquier bandeja de paredes altas o en la <a href="http://www.ikea.com/es/es/catalog/products/70186090/">tapa del microondas</a> boca abajo) y espolvoreamos con azúcar glass, luego los dejamos enfriar un rato hasta que estén tibios: y a comer!</li>

<ol><li>Whisk in the bowl the bread flour, potato starch, sugar and salt. Add the butter, lemon zest and the milk with the dissolved yeast.</li>
<li>Knead everything:<br />
- 15 minutes by hand, you can see <a href="http://youtu.be/dWj8oHMPFm0?t=20s">this video</a> to do it correctly.<br />
- If using a mixer, use the kneading hook and knead for 3 minutes in low speed and increase to high for 8 minutes.</li>
<li>Form a ball and leave it rest in the bowl, covered with the dishcloth or towell, for 90 minutes.</li>
<li>When done, knead it a little bit more by hand to let the air out of the dough and divide into 15 small balls (aprox. 35g each). Place them on a sheet covered by parchment paper.</li>
<li>Leave them rest on the sheets for one hour more, until they double their volume. Preheat oven to 180º C (355º F)</li>
<li>Bake for 15 minutes or until lightly golden. Leave them cool on a rack and eat warm. </li>

Es posible que no, pero a mí me pasa <b>siempre</b>. Desde pequeña. De pronto, se me apetecían cereales para desayunar y desayunaba, merendaba, e incluso a veces (si colaba) cenaba cereales durante dos semanas mínimo! Y así hasta aburrirme de ellos durante meses.<br />

Lo mismo me ha pasado con las tostadas con paté –y sus distintos tipos, tanto caseros como comprados–, o tostadas con aceite y azúcar, o con aceite y jamón york, o con mantequilla sin sal, o colacao con galletas maría (a rebosar de galletas maría partidas en dos!)... Ahora, por ejemplo, llevo dos semanas desayunando y merendando tostadas con mantequilla y mermelada de albaricoque. Sin parar. <br />

Pues resulta, que cuando era pequeña, si había algo que jamás aborrecí era el batido de chocolate. Nunca jamás de los jamases se me ocurrió probar otro batido y traicionar a mi fiel amante batido de chocolate. Recuerdo salir de la piscina en verano y dejar de jugar solo para tomarme un batido de chocolate... Aunque nadie más quisiera uno y tuviese que irme sola! Con el batido me bastaba.<br />

Pero, sorprendentemente, durante la adolescencia, algo le pasó a mi estómago batidochocolatero y me dio por beberme un batido de fresa, fresquito... en el verano de Sevilla –para los que no lo conozcan, es como estar dentro de una olla esprés a máxima potencia– y cambió todo. Ahora solo se me apetecen batidos de fresa!<br />

Y ha sido en esta obsesión de batidos de fresa que empecé a probar recetas de batidos de fresa caseros, que eran más bien "triturados de fresa" caseros (con hielo, sin hielo, a partir de fresa, a partir de helado, con kiwi, con plátano...) que están muy buenos! Pero que no son el mítico batido de fresa, el de toda la vida!<br />

Pues bien, un día, babeando por uno de mis blogs preferidos, <a href="http://www.pastryaffair.com/">The Pastry Affair</a> (está en inglés, si sabéis, es de obligación visitarlo!) me encontré con esta receta y no he vuelto a mirar atrás. Se hace a partir de un sirope de fresas frescas (imagino que con congeladas también saldrá rico al tenerse que cocer, voy a probar y os contaré!) que se mezcla con la leche fresquita y... gmñanmm!<br />

<ol><li>Primero cortamos las fresas a rodajas, tirando los cabos, las pesamos y ponemos en el cazo.</li>
<li>Añadimos al cazo el azúcar, el agua y el extracto de vainilla, lo removemos suavemente y ponemos el fuego al máximo hasta que rompa a hervir.</li>
<li>Una vez hirviendo, bajamos el fuego a medio-alto y lo dejamos hervir 10-12 minutos.</li>
<li>Lo apartamos del fuego y lo colamos. No tires la mermelada que queda en el colador, está buenísima con tostadas con mantequilla o yogur (o en las <a href="http://conharinasyaloloco.blogspot.com/2012/02/tortitas-y-despegando.html">tortitas</a>... yumm!) </li>
<li>Deja enfriar el sirope y, una vez frío, mezclar con la leche fría. Dejarlo en el frigorífico y removerlo antes de servir.</li>

<ol><li><span style="font-size: large;"></span>Slice the strawberries and put them in the saucepan.</li>
<li>Add the sugar, vanilla and water in the saucepan and gently stir. Put the saucepan on the heat on high until it boils.</li>
<li>As soon as it boils, low the heat to medium-high and boil it for 10-12 minutes.</li>
<li>Remove the saucepan from the heat and run everything through a sieve. Don't throw the strawberry kind-of-marmalade that is in the sieve! It's awesome on <a href="http://conharinasyaloloco.blogspot.com/2012/02/tortitas-y-despegando.html">pancakes</a>, yogurt or a slice of toast with butter!</li>
<li>Put the syrup in the fridge and, once cool, stir it in the cold milk. Refridgerate and stir again before serving! </li>

Si hay algo que siempre triunfa es el chocolate. Y por supuesto pasa lo mismo con los bizcochos de chocolate... Cualquiera es bueno! Por muy mal que te pueda salir, siempre saldrá "rico" o, al menos, comestible. Posiblemente tenga que ver con los millones de chocolateadictos que pululamos por el mundo.<br />

Eso sí, una vez pruebas <i>El Bizcocho</i> de chocolate, todo cambia. Este que os voy a enseñar, ha sido mi <i>El Bizcocho</i>. Tiene un sabor a chocolate lo suficientemente potente como para gustar a amantes del chocolate con leche y del negro (lo cual, entre mis amigos, es un deber!) y tan esponjoso... TAN ESPONJOSO...!! Gñanmmm...<br />
<br />
He de reconocer que he hecho este bizcocho tantas veces que podría parecer una psicópata, (una vez incluso a las 12 de la noche... por un ataque de necesidad chocolateica desayunil! Vale, posiblemente use demasiados palabros, pero se entiende, no?), pero es que siempre que hay una ocasión especial necesitas la seguridad que te da este <i>El Bizcocho</i>, que nunca falla!<br />
<br />
Solo, o con azúcar glass, con chocolate o glasa de vainilla, o a modo de layer cake (tarta de capas, con relleno) uniendo dos bizcochos y rellenándolo, o como base para una tarta con fondant (la pasta de azúcar decorativa)... Hay miles de posibilidades! Incluso añadirle un puñado de pepitas de chocolate o nueces.<br />

Os quiero decir antes de meternos de lleno en la receta, que hay dos enormes necesidades a la hora de hacer repostería que una vez compréis, creedme que lo vais a amortizar! Y tampoco es tanto dinero para los años que os van a durar (no sé cuántos, a mí no se me han roto nunca!) <br />
<br />
Lo primero que vamos a necesitar, y que es absolutamente <b>obligatorio</b> (aunque siempre puedes quedarte sin brazo durante un mes después de hacer el bizcocho!) es una <u>batidora de varillas eléctrica</u>. Esas que se cogen con una mano o sobre un vaso que tienen dos varillas independientes que dan vueltas. Las hay de todo tipo de precios, la mía cuesta 23 euros en el Worten (es <a href="http://www.worten.es/ProductDetail.aspx?pid=03711902&oid=32%7C57&c=2655126">ésta</a>), aunque sé que también las tienen allí de 13 euros e incluso de 60! Todo depende de vuestro presupuesto, pero ya os digo, llevo dos años ya con la mía y no me ha dado ningún problema. Y creedme, le he dado caña! También venden en El Corte Inglés y creo que en Mediamarkt también.<br />
<br />
El otro gran imprescindible, y que ya conoceréis de la primera entrada, es la <u>báscula digital</u>. Algunos me habéis preguntado que cuál y que dónde. Yo la compré en la <i>loja do gato preto</i> por 18 euros creo que era, y sé que la tienen en Ikea también por 21 euros (es <a href="http://www.ikea.com/es/es/catalog/products/90100057/">ésta</a> y tiene muy buena pinta!) Aunque, de verdad, cualquiera que veáis que ponga 1g de margen de error, está de lujo! Si no, siempre se puede tirar de las "analógicas", aunque son más imprecisas.<br />

<ol><li><span style="font-size: large;"> </span> Primero vamos a <u>preparar todos los ingredientes</u>, para que luego todo sea más rápido y fácil: <br />
- Sacamos la mantequilla y la leche del frigo con antelación (en invierno 2 horas o así y en verano 30min) La leche, si se nos olvida, podemos templarla un poco con el microondas, pero la mantequilla es <b>obligatorio</b> para toda repostería sacarla y dejarla que se ponga a temperatura ambiente solita. Para facilitarlo, la cortamos en cubitos de un dedo de ancho. <br />
- Pesamos el chocolate y lo derretimos al baño maría o al microondas (yo lo hago utilizando la opción de descongelar y sacándolo cada 20 segundos a darle vueltas con una cuchara o espátula, aunque parezca que no se ha derretido nada. También podemos ponerlo en intervalos de 15 segundos sin la función de descongelar y siempre dándole vueltas cada vez que lo paremos. Llega un momento en el que quedan pequeños trocitos que se derriten solos con el calor del resto) Lo dejamos que se enfríe apartado.<br />
- Pesamos la mantequilla y el azúcar y las ponemos juntas en uno de los boles grandes. <br />
- Pesamos la harina y la tamizamos en el otro bol grande (yo pongo el colador y el bol encima de la báscula y ahí mismo la peso, y luego solo hay que tamizarla) y le echamos la levadura, el bicarbonato y la sal.<br />
- La leche la ponemos en una jarra o taza con el extracto de vainilla.</li>
<li>Cogemos el bol de la mantequilla y el azúcar y vamos a batirlas juntas, con la batidora de varillas durante 4-5 minutos a velocidad media-alta hasta que se forme una crema esponjosa, más clara que al principio.</li>
<li>Cogemos los dos boles pequeños y vamos a separar las yemas de las claras, colocando las yemas en un bol y las claras en el otro, que vamos a alejar para que no le caiga nada de grasa. Cogemos el bol de las yemas y, sin necesidad de limpiar las varillas, las batimos 2-3 minutos hasta que se aclaren. </li>
<li>Volvemos a coger el bol de la crema de mantequilla y azúcar y, sin dejar de batir, vamos añadiendo poco a poco las yemas. Luego, cogemos el chocolate derretido y enfriado, lo añadimos también y batimos bien.</li>
<li>Ponemos a precalentar el horno a 190ºC (170º si tiene ventilador, el mío no tiene) </li>
<li>Mezclamos bien los ingredientes secos del bol de la harina con una varilla. Removemos la leche con el extracto de vainilla en la jarra. Ahora, vamos a coger el bol de la mezcla principal y a añadirle 1/3 a ojo de la harina y batimos bien. Añadimos la mitad de la leche y volvemos a batir. Agregamos otro tercio de la harina, batimos, la otra mitad de la leche, batimos y, finalmente, el último tercio de harina y terminamos batiendo bien. </li>
<li>Ahora vamos a limpiar muy bien las varillas, porque vamos a montar las claras y necesitamos que no haya ni un gramito de grasa (ni aceite, ni mantequilla, ni parte de las yemas... vamos, nada! Porque si no no subirán ni en broma). Yo, para asegurarme de que van a subir, restriego un papel de cocina mojado en unas gotitas de limón o vinagre en las varillas. Cogemos el bol de las claras y batimos a velocidad alta hasta que monten.</li>
<li>Ahora, añadiremos las claras a la masa principal, y vamos a mezclarlas con la cuchara de metal. La forma correcta de hacerlo para que no pierdan aire las claras es añadiendo 1/3 de las claras primero y mezclando normalmente, luego echaremos el resto e iremos "rabañando" el fondo del bol y echándolo por encima de las claras. Giramos el bol un 90% y repetimos. En <a href="http://youtu.be/0Yie5V37E1w?t=1m10s">este vídeo</a> se ve perfectamente cómo se hace. Una vez esté homogénea la masa, listo!</li>
<li>Ahora cogeremos nuestro molde redondo y tenemos tres opciones: o lo engrasamos con mantequilla y espolvoreamos harina por encima, o lo engrasamos con aceite, o la que más me gusta: con papel para horno lo forramos cortando un círculo del tamaño de la base y, opcionalmente, una banda para cubrir el lateral. Echamos la masa dentro y la alisamos con el dorso de una cuchara (obligatorio limpiar la cuchara con la lengua, está buenísima la masa!).</li>
<li>Hornear durante 30 minutos. Para ello, yo siempre lo dejo 25 minutos y voy controlando de 3 en 3 minutos pinchándolo con una brocheta o agujita, si sale limpia (o con algunas miguitas), está listo! Por cierto, está prohibido abrir la puerta del horno antes de esos 25 minutos!</li>
<li>Al desmoldar, dejar enfriar encima de una rejilla (la del horno, enfriándola antes con agua fría, vale! Yo, antes de comprarme una rejilla para ello, usaba también la de tapar las sartenes de ikea –<a href="http://www.ikea.com/es/es/catalog/products/10112530/">ésta</a>– colocándola boca abajo encima de cualquier bandeja de paredes altas o en la <a href="http://www.ikea.com/es/es/catalog/products/70186090/">tapa del microondas</a> boca abajo) </li>

<ol><li>First, weigh all the ingredients and leave the butter and sugar in one of the big bowls; the sifted flour, baking powder, bicarbonate of soda and salt in the other one; the milk and vanilla extract in the jar or mug; and leave the melted chocolate cool while preparing the batter.</li>
<li>Cream the butter and sugar beating for 4-5 minutes, until pale and fluffy.</li>
<li>Separate the whites from the yolks and leave each one in each small bowl. Beat the yolks for 2-3 minutes until pale. </li>
<li>Add the yolks to the butter and sugar bowl slowly while beating. Then, add the cooled chocolate and beat again. </li>
<li>Preheat the oven to 190ºC (375ºF)</li>
<li>Whisk the dry ingredients in its bowl. Stir the milk with the vanilla extract. Now, add 1/3 of the dry ingredients to the batter and beat well. Then, 1/2 of the milk and beat again. Another 1/3 of the dry ingredients and beat, the last half of the milk and beat, and finally the last 1/3 of the dry ingredients and beat well again, until smooth.</li>
<li>Now, clean well the beaters and whisk the egg whites in high speed until soft peaks form.</li>
<li>Fold the whites into the batter carefully, using the metal spoon or a spatula (<a href="http://youtu.be/0Yie5V37E1w?t=1m10s">here</a> is a great video on how to do it right)</li>
<li>Grease and line the cake tin and fill it with the batter. Bake for about 30 mins (I like to leave it 25 mins and insert an skewer in the middle of the cake. If the skewer doesn't come out clean, leave another 3 minutes and repeat until clean.) And leave it on a cooling rack until cool.</li>
<li>Decorate with icing sugar, buttercream, ganache or sprinkles, it will be great anyway! </li>

Al final, me he dado cuenta de que, desde hace años, antes de descubrir el mundo de los blogs incluso, hemos hecho en casa tortitas. Aún recuerdo cuando mi tía, intentando darnos una clase de "darle la vuelta a una tortita con clase" la estampó contra la campana –en serio, usad una espátula para darle la vuelta!<br />

Pero voy a explicarlo paso a paso para que no tengáis ni una sola duda (y si la tenéis, preguntad en los comentarios y listo :D)</span></span></span></span><span style="font-size: large;"><span style="background-color: white; color: #cccccc;"></span></span><br />
<ol>
<li><span style="font-size: large;"> </span> Tamizamos<b>*</b> la harina en un bol grande (si usamos un bol pequeño, terminará cayendo más harina fuera que dentro!), añadimos la sal, el azúcar y la levadura en polvo. Removemos bien y apartamos.</li>
<li><span style="font-size: large;"> </span> Si las vamos a hacer <u>con batidora</u>: Buscamos un recipiente alto, en mi caso una jarra alta, y añadimos los huevos, la margarina o mantequilla, la vainilla, la mezcla de harina del bol y la leche. Batimos bien hasta que quede una masa homogénea.<br />
Si las hacemos <u>a mano</u>, hacemos un hueco en el centro de la mezcla de harina en el bol (como un volcán) y añadimos los huevos, la margarina o mantequilla, la vainilla y la leche. Cogemos un tenedor y removemos muuuy bien hasta que quede una masa homogénea (si hay algún grumito suelto, da igual)</li>
<li><span style="font-size: large;"> </span> Ponemos una sartén al fuego, al principio al máximo para que se caliente, y echamos en el centro media cucharada de margarina. Una vez se derrite y empiezan a salir burbujitas, bajamos el fuego un poco (para hacer la primera tortita, que la sartén aún no está del todo caliente, pongo el fuego al 10 de 12). </li>
<li> Echamos la masa dejándola caer desde la jarra <u>sin moverla</u> (desde el centro de la sartén, así salen redondas perfectas!) hasta que tenga 12cm más o menos, ya que se va a expandir un poco. Dejamos la tortita hasta que empiecen a salir burbujitas y le damos la vuelta con cuidado (yo compruebo que esté hecha la parte de abajo dándole un meneo a la sartén, y así de paso no se pega). Es normal que chorree la masa cruda de encima, no os preocupéis! Se deja un minuto o dos más y se saca con la espátula a un plato.</li>
<li> Para las siguientes tortitas, siempre es mejor bajar el fuego un poco más, yo suelo dejarlo al 8 de 12 y, más adelante, veremos que se empiezan a hacer más y más rápido, teniéndolo que bajar aún más (normalmente termino de hacer tortitas con el fuego a 6 de 12 o por ahí!). Poco a poco sabréis perfectamente cuándo están hechas por debajo incluso sin que salga ninguna burbujita, dándole meneos a la sartén o simplemente por el color de los bordes!</li>
</ol>
*<b>Tamizar la harina</b> es pasarla por un colador (o tamiz) para airearla y, de paso, colar cualquier impureza o mierduqui que pueda tener (creedme, una vez tengáis una invasión de gorgojos, lo haréis traumáticamente cada vez que uséis harina!). Para hacerlo, colocad el colador encima del bol grande y echad la harina encima, luego sujetad el mango del colador con una mano y, con la otra, dadle tortas rápidas en un lado para que vaya cayendo hasta que pase toda. Listo!<br />
<br />
<b>Notas</b>: Os recomiendo colocar el bol encima del peso e ir pesando inmediatamente, mientras vais incorporando los ingredientes (utilizad la opción de tara, que seguro que viene en el manual y ahorra un montón de tiempo colocando el peso a 0 para volver a pesar después de haber pesado otro ingrediente.)<br />

<b>Sugerencias: </b>Estas tortitas están buenas tal cual, pero suben de nivel si le ponéis un sirope de caramelo (mi preferido es el Royal), o Nutella, o chocolate derretido, o nata, o sirope de fresa, o sirope de nuez de arce, o <i>lemon curd</i> como se ve en la foto de abajo (para los amantes del ácido... tengo que pasaros esa receta!) o frutas por encima... O simplemente improvisad y luego me contáis!<br />

<ol>
<li><span style="font-size: large;"> </span> Sift the flour in the large bowl (if we use a little bowl we'll finish having more flour out than in it!) Add the salt, sugar and baking powder. Whisk everything and leave aside. </li>
<li><span style="font-size: large;"> </span> <u>With blender</u>: Add the eggs, the margarine or butter, the vanilla extract, the flour mix and the milk. Blend it all until we get a smooth batter.<br />
<u>By hand:</u> Make a hole in the middle of the flour mix (like a volcano!) and add the eggs, the margarine or butter, the vanilla extract and the milk. Take a fork and stir until smooth (some lumps are ok!) </li>
<li><span style="font-size: large;"> </span> Put the frying pan on the heat, firstly on high and add 1/2 tbsp of margarine or butter to fry. Once it's melted and has some bubbles, lower the heat to medium-high. </li>
<li> Pour 1/4 cup of batter on the middle of the pan without moving the 1/4 cup (or the jar, if you are pouring it right from it!) until they reach 12cm diameter more or less. Leave the pancake until some bubbles form and turn until brown. </li>
<li> For the next pancakes, it's better to reduce the heat even more, leaving it medium-low. </li>
</ol>
<b>Suggestions: </b>These pancakes are lovely with caramel sauce, any syrup, melted chocolate, lemon curd (have to share that recipe... it's so yummy!) or anything you can imagine!<br />
